Abstract

The body needs nutrients, one of which contains high-quality protein, namely animal protein. Chicken meat has a weak unsaturated content and has a compact meat structure and simple protein that easily digested and the price of meat is easily accessible by the general public compared to meat from other animals. Chicken meat is easily contaminated with bacteria, especially Escherichia coli. These contaminants can occur through the hands of traders with poor personal hygiene, especially chicken meat sold in traditional markets. The purpose of this research was to determine the correlation between personal hygiene and the detection of Escherichia coli bacteria in the palm swabs of chicken traders. Correlation analytic research method with purposive sampling technique using 12 samples of the palms of chicken meat traders. The research method uses a culture test on Eosin Methylene Blue Agar media, Gram staining and biochemical tests as well as a questionnaire to determine the personal hygiene of chicken meat traders. The results of this research were 8 samples 66.7% found Escherichia coli bacteria on the palms of chicken meat traders and 4 samples 33.3% other Gram negative and Gram positive bacteria and the results of personal hygiene questionnaires chicken meat traders were categorized as 100% unfavorable. The conclusion of this research shows that Escherichia coli is the most common bacteria found and there is a correlation between personal hygiene and the detection of Escherichia coli bacteria on the palm swabs of chicken meat traders' hands at the market in Kediri city.
